Homegrown Horseradish Sauce?
Horseradish is one of the many culinary herbs brought to Britain by the Romans. It was one of the bitter herbs eaten by Jews at Passover to remind them of the hard times suffered under Pharaoh.
Traditionally, Horseradish has been used to dispel evil forces by sprinkling it into the corners of the house, windows and doors. By the Middle Ages, Horseradish was used in a poultice to treat sciatica, rheumatism and gout.
The plant has lovely white flowers in early summer and forms a large clump. It will grow pretty much anywhere so is perfect for that odd corner in which nothing much grows.
The roots are shredded and used as a relish and it is also used in pickles and the young leaves can be used in salads.
